Lorene’s Chocolate Covered Walnuts

2 egg whites
1½ cup granulated sugar
1 Tbsp vanilla extract
1 tsp Baking powder
1 cup chopped Avanti walnuts
20 Ritz crackers crushed
½ pint whipped cream*

Beat egg white until stiff. Add sugar, vanilla extract, and baking powder. Add chopped Avanti walnuts and crushed crackers. Place ingredients in a greased 8″ pie tin. Bake 325 degrees for 35-45 minutes. Cool. Top with whipped cream. Refrigerate overnight. Before serving garnish pie with walnut halves. Enjoy!
* Cool Whip can be used as a substitute for whipped cream
